A message from Susanna Hawksley
I remember Sr Anne-Marie with such love. Miles thought she was called Sister Jamboree – she was such fun. She gave me this apple cake, in her garden, one summer afternoon and it was delicious. I asked her for the recipe; I think it’s just perfect for any occasion and I wondered if parishioners might like it, too.
Sister Anne-Marie’s Apple Cake
Serves 8
Oven: 160C
Time: Approximately 1.5 hours
5oz margarine (I use butter), melted
2 large eggs
8oz caster sugar
1 teaspoon vanilla essence (or almond essence, if you like it)
1 teaspoon baking powder
8oz self raising flour 12oz cooking apples, peeled, cored and sliced
1oz flaked almonds Demerara sugar (I use a small teaspoon)
Grease a round, not too shallow 8 inch cake tin
Put all ingredients except apples, Demerara and almonds into mixing bowl.
Mix well until smooth.
Working quickly, spread slightly more than half into the tin.
Arrange prepared apple over and then dot teaspoons of the remaining mixture over the top.
Scatter the flaked almonds over and sprinkle a little Demerara over.
Bake until pale and golden.
Cool a bit before removing from tin, or it will break.
Delicious as cake on its own or as a pudding, with some creme fraiche.
